Cream Processing Line

Triowin Dairy Equipment Division focuses on the research and development and manufacturing of dairy production line equipment, providing cream manufacturing equipment with different fat contents to meet the diverse needs of users. Usually, cream with a lower fat content (10-18%) is increasingly used in desserts and cooking. Cream with a higher fat content (35-40%) is usually used in desserts or cooking, etc.

The unprocessed raw milk from the milk tank is recovered in the plate heat exchanger and heat exchanged to the separation temperature of 62-64℃. Then the milk flows to the separator, which separates skim milk and cream with the required fat content, usually 35-40%. Cream needs to be mixed with skim milk to reach the required fat content, and then homogenized.

Cream and skim milk are mixed in a metering pump, where skim milk is sprayed into the cream line, and then the cream temperature is adjusted to the homogenization temperature. After homogenization, the cream flows back to the plate heat exchanger, the pasteurization temperature is maintained at 85-90℃ for 15-20 seconds, and then cooled to 5℃ for packaging. Cream with low fat content has a relatively low viscosity, which is not the viscosity that customers usually want. It is very necessary to choose the right homogenization temperature and pressure to make the cream reach the right viscosity. As the homogenization pressure increases, the viscosity of the cream increases, and the viscosity decreases when the homogenization temperature increases. Keep the homogenization temperature constant at about 57℃, and the viscosity is the highest when homogenized at 200bar.
