  • 3.Features

Hard and semi-hard cheese is processed with milk, added with a specific strain of pre fermentation, and added with rennet. The clot is formed by the enzyme action of rennet, which makes the milk coagulate into solid jelly. The clot is cut into small clot of required size with special cutting tool - this is the first step for whey precipitation. In the process of clot processing, bacteria grow and produce lactic acid, and the clot particles are mechanically treated under the stirring device, while the clot is heated according to the predetermined procedure. The mixing effect of these three functions - bacterial growth; mechanical treatment; heat treatment - causes the clot to contract, and the whey to separate from the clot. Finally, the clot is loaded into a metal wooden or plastic mold The shape of the final product cheese was determined. Cheese is pressed by self weight or pressure to the mould. In the processing of clot, the processing and final pressing of clot determine the characteristics of cheese. Finally, the cheese is soaked, wrapped and packed.
